Along the way, distinct stages of the roasting process are marked by unique sounds, the most famous being the “first crack.” Much like popcorn popping, this crack signals that the coffee beans are expanding and the roast is truly beginning.
The dramatic changes you see during roasting are driven by a fascinating transformation on a molecular level. It’s like a watching a magic tricked performed right in front of you, where YOU get to see the magicians secrets! Heat unlocks incredible flavors from the green beans by these components:
Maillard Reaction: This is what gives coffee its rich, nutty, and savory notes. It's the same reaction that browns toast and sears meat, turning sugars and amino acids into hundreds of new flavor compounds. Our skilled roaster can use this to develop notes of dark chocolate and buttery richness.
Caramelization: This occurs as the sugars in the coffee bean turn to caramel, which develops sweetness, body, and a deeper color.
A roastery tour is a sensory experience. You’ll be surrounded by the incredible aroma of our single origin coffee beans handpicked days before at our farm as they roast. It's educational, delicious, and a great introduction to the final art of specialty coffee.

Why a Farm Tour Offers the Full "Farm to Cup" Story
A coffee farm tour in Puerto Rico takes you back to the very beginning. You can walk the fields and see the coffee cherries ripening right from the vine. You’ll see it to believe it the incredible journey from the first seeds to the roaster, which involves a series of crucial, hands-on processes.
Planting & Growing: The journey starts with a single seed, nurtured in the fertile volcanic soil of our mountains. A coffee tress can take 3-4 years to produce its first cherry.
Harvesting & Processing: When the coffee cherries are ripe and red, they are carefully hand-picked. On our coffee farm tour, you’ll learn about our unique Honey Process. This method involves removing the skin of the coffee cherry, but leaving some of the sticky fruit pulp, on the coffee bean as it dries. This sticky layer infuses its natural sweetness and gives it a fuller body, which are qualities you’ll be able to taste right away!
Drying, Milling & Sorting: You'll see the coffee beans laid out on beds to dry in the sun before they are milled to remove any remaining layers. The final step is sorting, where we keep a sharp eye to ensures only the highest quality beans make it to the next stage.
