It Starts with the Soil
The secret to our specialty coffee's amazing flavor begins deep beneath our feet. We use a special method called regenerative farming. Think of the soil like a giant sponge. Instead of digging it up and letting it dry out, we add tons of healthy organic compost made on the farm from leftover coffee pulp.
For every 1% that we increase the organic matter in our soil, it can hold over 20,000 gallons of extra water per acre! This makes our farm more resilient to dry periods and helps us grow stronger, healthier coffee trees. It's our way of giving back to the environment, making the land better than we found it.

Coffee beans are healthiest when their moisture is between 10-12%. This prevents fraud, reduces mistakes, and maintains consistency in the dark chocolate, citrus, and buttery notes Puerto Rican coffee is known for.

Our farm hosts student exchange and training programs where local students from Puerto Rico come to learn about the science of coffee. We’re like a big open-source science lab! When we discover a new way to fight coffee rust (a common plant disease) or a better way to process a coffee bean for amazing flavor, we share that information with other farmers in our community. This helps EVERYONE, grow better coffee and build a stronger local economy.
Processing Method Documentation
We specialize in a unique method called the honey process, and it’s a lot like a special secret recipe for flavor! Instead of using a lot of water to wash the coffee beans clean, we leave a thin, sticky layer of fruit pulp on the coffee cherry. We then lay the coffee beans out to dry in the sun, and as they dry, the sugars from that sticky layer soak into the coffee. The result is a unique, syrupy sweetness with a bright, clean finish.
